CMC is a powder you can add to sugarpaste to help keep the shape you're modelling. I think they also use it to make pastillage.
The 'natural' equivalent is gum tragacant, but it is more expensive.

Ok....is it mixed to ready-made, or added to hand-made? and is sugarpaste the same as fondant?

sugarpaste is the same as fondant. In the course we had to say sugarpaste, because fondant is the sugar you use to dip cupcakes in.
Pastillage is sugarpaste with a hardener added to it. It dries very hard and is as delicate as porcelain. I made a box from it. You can see it in my gallery. You can buy it as a powder and only have to add some water to it.
The 'hardeners' for sugarpaste are gum tragacant and CMC. It's used also for medication to make pills.
You can add CMC or gum tragacant to ready-made and hand-made sugarpaste.

How did you fill them into the cake? Did you just sort of feed their wires directly into the cake from the centre and work your way around? Were they sitting without any wires just on the cake? Sorry for lots of questions - I'm just curious! :?

That's no problem...:)..I don't mind answering them.
..I don't use wire for flowers. If you saw my tutoral [link] I make them like that, and leave the stump on so I can cut them the height I need. I secure them on the cake with Royal Icing. I made the little ones, and just popped them in the gaps while they were a bit soft, and used a small paintbrush so coax them where I wanted...

Those are Beautiful!!! :heart: I can't even begin to imagine the time they took... O_o

And they are all different sizes and stages of blooming and fit together perfectly! That shows to me more than just a talent for makeing em but for planing and design also! Super major kudos to you Hun!!! :worship:
