And I feel your frustration! A few months ago we replaced our (lovely faithful) gas oven. Fan-assisted ovens are just so tricky to get right! I've had everything from under-cooked to completely dried out sponges. With the gas oven, it's perfect every time. So strange.
......and yes, even now it's a bit hit-n-miss. I think it's going to take
quite a while to get near to the same sort of results.
..I love the simple but beautiful designs too. I wish I could make more....^^
